This is a quick, easy, and filling meal that we make quite often.  The recipe comes from the Blendtec "Fresh Blends" recipe book, and it has quite a kick so go easy on the crushed red pepper!

Blendtec Beans and Greens Soup

1 Tbsp olive oil

1 onion, chopped

1 clove garlic, minced

2 c water, divided

2 tsp bouillon

4 c kale, ribs removed and roughly chopped

2 (15oz) can white beans, rinsed and drained

½ tsp crushed red pepper

¼ tsp cumin

Heat oil over medium-high heat in large saute pan.  Add onion and garlic an cook until tender, approximately 5 minutes.  Add 1 cup water, bouillon, and kale to pan and cover.  Cook until kale is wilted, about 5 minutes.  While kale is softening, add remaining water, half of beans, crushed red pepper, and cumin to jar.  Select “batters.”  Add bean blend and remaining whole beans to pan.  Simmer for approximately 5 minutes and serve.
