Taco Sundae

This is one plant based meal no one complains about! Steam brown rice. Combine 4 cups cooked pinto beans with 1/2 cup water and 2 Tbsp taco seasoning and heat until warm. Prepare toppings: whole kernel corn, shredded lettuce, chopped tomatoes, sliced olives, grated cheese (optional), diced avocado, salsa, salad dressing, tortilla chips (slightly crushed). Layer rice, beans, corn, lettuce, tomatoes, olives, avocado, cheese, salsa, salad dressing, and tortilla chips. Put ingredients on the table separately so everyone can choose what they like on their sundae.
